Fruited Wild Rice

 

Served during our September and October events at the shop and at home dinners, alongside Honey Ginger Pork Tenderloin.

 

Ingredients: 

1 (6-ounce) package long-grain and wild rice mix

2 cups water

1 tablespoon butter or margarine

1 teaspoon grated orange rind

1/4 cup halved green grapes 

1/4 cup chopped Red Delicious apple

1/4 cup golden rasins

1/4 cup slivered almonds, toasted 

1 teaspoon grated orange rind

 

1. Combine rice mix, water, butter and 1 teaspoon grated orange rind in a medium saucepan. 

2. Bring to a boil; cover, reduce heat, and simmer 20-25 minutes or until rice is tender and liquid is absorbed. 

3. Combine grapes and remaining ingredients in a large bowl; toss gently. Add rice mixture; toss gently to combine. Serve immediately. 

Yield: 6 servings
